Biggest Loser Sweet Potato Bites



  • 1 1/2 Pound Sweet Potatoes
  • 2 Teaspoons Cinnamon
  • 1/8 Teaspoon Mace
  • 1/8 Teaspoon Cardamon
  • 2 Teaspoons Sugar Substitute
  • 1/8 Teaspoon Nutmeg
  • 1 1/2 Tablespoon Olive Oil



Lightly coat a 15 x 10-inch baking sheet with olive oil spray.

Position a rack in lower third of oven. Preheat oven to 425 degrees Fahrenheit.

Scrub sweet potatoes well. Rinse and dry completely. Cut sweet potatoes into 3/4-inch dice. Transfer sweet potatoes to prepared baking sheet.

Drizzle olive oil over sweet potatoes. Sprinkle with spices and sugar substitute. Toss well to coat and place baking sheet on lower rack. .

Bake about 30 minutes, or until golden on the outside and tender inside. Turn potatoes once during baking.

Parmesan Pepper Sweet Potato Fries


  • 1/2 pound sweet potatoes, cut into 1/4" thick sticks
  • 1 Tbs. grated reduced-fat Parmesan cheese
  • 1/2 tsp. extra-virgin olive oil
  • 1/8 tsp. garlic powder
  • 1/8 tsp. paprika
  • Pinch of cayenne
  • Salt to taste
  • Pinch of ground black pepper
  • Ketchup (optional)


  1. Preheat oven to 450 degrees F
  2. In a medium bowl, toss the potatoes, cheese, olive oil and spices
  3. Place potatoes in a single layer on a medium nonstick baking sheet
  4. Bake for 8 minutes
  5. Flip the potatoes and bake for 10-12 minutes, or until the potatoes are tender and browned in spots.
  6. Serve immediately

For those of you who don't understand when to add the ingredients, re-read #4 of the instructions.
Drizzle olive oil over sweet potatoes. Sprinkle with spices (cinnamon, mace, cardamon, & nutmeg) and sugar substitute. Toss well to coat and place baking sheet on lower rack.

This recipe doesn't tell you when to use the ingredients that it gives you. Does anyone know when to use the list of ingredients? I know its not really a pie but am I to mix all the ingredients then sprinkle it on the potatoe?

Pay attn people. Of course all of the ingredients match up with the instructions. This is an alternative to evil Vicky's sweet potato pie not an actual pie.

there is no "pie" to assemble as with a crust, etc. if that's what you're asking. Rocco made this on the Biggest Loser. It's a healthier version of the recipe. It's basically baked sweet potatoes. Very good!!

Recipe incomplete. Doesn't use any ingredients nor does it state how to assemble the pie.

The Biggest Loser - Orange Spiced Mashed Sweet Potatoes

1.5 lbs sweet potatoes, peeled and cut into 1/2" cubes 1/2 c orange juice 2 Tbs light tub butter 1/2 tsp pumpkin pie spice 1. Cook the potatoes in a large pot of boiling salted water until very tender, about 12 minutes. Drain.
2. In a mixing bowl, combine the potatoes, orange juice, butter, and pumpkin pie spice. Beat with a hand mixer until smooth. Season with salt and pepper. Serve.

The Biggest Loser - Rosemary Sweet Potato Fries

2 lbs sweet potatoes, peeled and but into steak fries 1.5 Tbs freshly minced garlic 1.5 tsp dried rosemary 2 tsp EVOO 1. Preheat oven to 450
2. In a large mixing bowl, toss the potatoes with the other ingredients. Add salt to taste.
3. Arrange in a single layer, not touching, on a nonstick baking sheet. Bake 15 minutes.
4. Turn potatoes and bake 10-15 minutes longer, until tender inside.

Biggest Loser Sweet and Spicy Pork Tenderlion

Preheat oven to 350 degrees. Lightly mist a small roasting pan or oven proff skillet with non stick spray and set aside.

In a small bowl combine all the spices** and combine well. Rub the pork evenly with the spices and cover with plastic wrap. Refridgerate for about 15mins.

Meanwhile, in a small bowl, wisk together the honey, garlic, and hot sauce.

Preheat a large non stick skillet over medium high heat and put a few drops of canola oil in the pan to keep from sticking (**olive oil might cause your pan to smoke). Cook the pork for about 1 minute per side or until browned on all sides. Transfer the pork loin to the prepared pan and baste with the honey mixture on all sides with a basting brush. Place a meat therm. in the middle of the loin and set to 160 degrees.
Roast tenderlion in the oven for about 28-35 minutes or until it reaches 160 degrees and the juices run clear. Remove from oven and cover loosely with foil for aprox 10 minutes. Slice on an angle into thin slices.

Makes aprox. 5- 4 oz servings.

***I omitted the 1/2 tsp of cumin and substituted chili powder for 1/8tsp of chipotle chili pepper powder from the original recipe due to the tastes of my family.

Roasted Sweet Potato and Toasted Sage Dip Recipe


  • 2 tablespoons olive oil, divided
  • 2 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • 3/4 teaspoon kosher salt
  • 12 medium fresh sage leaves
  • 2 medium garlic cloves, roughly chopped
  • 2 cups fat-free low-sodium vegetable broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon freshly ground black pepper , crackers, or raw vegetables, for serving


Heat oven to 450°F and arrange a rack in middle. Using a pastry brush, coat one rimmed baking sheet with 1 tablespoon of the oil, add the potatoes and 1/2 teaspoon of the kosher salt and toss to thoroughly coat. Spread in a single layer on prepared baking sheet and roast, stirring occasionally, until potatoes are knife tender, about 20 minutes.

Remove from oven and set aside to cool slightly. Meanwhile, heat remaining 1 tablespoon of the oil in a medium frying pan over medium heat. When the oil shimmers, add the sage and garlic. Cook, swirling a few times, until sage is fragrant and garlic toasted golden brown. Remove from heat and set aside.

When cool enough to handle, transfer potatoes to a food processor fitted with a metal blade. Add all remaining ingredients and puree until very smooth, stopping to scrape down sides, as necessary

Serve warm or let cool then serve with roasted vegetable chips (recipe follows), raw crisp vegetables, or crackers. (Can be made up to 5 days ahead and stored refrigerated in an airtight container. Serve at room temperature or slightly warm.)

Beef Burgers and Sweet Potato Fries


  • Pam Olive Oil Spray
  • 3 large sweet potatoes, cut into fries about 1/3 inch thick
  • 3 Tbsp. fresh thyme leaves
  • Paprika
  • Cayenne
  • Salt (sparingly) and freshly ground pepper to taste
  • 1 medium eggplant
  • 4 Ezekiel Sprouted Hamburger Buns
  • 1-1/2 pounds organic EXTRA lean ground beef, formed into 4 patties
  • 1/4 cup Fage Greek Yogurt, 0% or 2% FAT FREE
  • 1/4 cup Wholemato Spicy Organic Agave Ketchup
  • 1-1/2 tsp. dijon mustard
  • 1 365 Organic Reduced Sodium Kosher Dill Pickle, chopped
  • 4 slices heirloom tomatoes
  • 4 slices white or red onion
  • 4 leaves romaine lettuce, broken in half


Preheat oven to 450 degrees. Line a baking sheet with foil and spray with Pam. Spread cut sweet potatoes out on tray and spray with Pam. Sprinkle with thyme, salt, pepper, paprika and cayenne. Bake until golden and tender, about 35-45 minutes.

Meanwhile, char eggplant over an open flame, rotating often to cook evenly, about 25 minutes. Skin should be completely black and flesh should be cooked through place in a bowl and cover tightly with plastic to steam off skin. After about 5-10 minutes, remove charred skin leaving behind the flesh. Chop eggplant, mix with 1/2 of the yogurt and season with salt and pepper.

Preheat a grill over high heat. Split buns in half and spray split surface lightly with pam. Season burger patties lightly with salt and pepper. Add buns and burgers to grill. Allow buns to char slightly and remove. Cook burgers about 3 minutes per side for rare.

Meanwhile, in a small bowl, combine remaining yogurt with ketchup, mustard and chopped pickles. To serve spread bottom bun with some of the eggplant mixture. Place burger on top and spoon 1/4 of ketchup mixture on top of beef. Top with tomatoes, onion and lettuce and bun top. Repeat with remaining burgers and serve with sweet potato french fries.

Weight Loss Journey: Second Wind

I’ve been listening to Maren Morris a lot lately and her song “Second Wind” really feels like it is my song right now. The chorus of the song really speaks to me:

“You can’t forget about me
While you weren’t lookin’ I was gettin’ even higher
Say what you want about me
Your words are gasoline on my fire
You can hate me, underestimate me
Do what you do cause what you do don’t phase me
Just when you think I’m at the end
Any second I’ma catch my second wind”

I’ve had such an inspirational week, changing my life, working toward becoming healthier and I feel so refreshed and renewed. I have caught my second wind, and I will achieve this goal. I am achieving this goal.

I had my first weigh-in on Wednesday at work for the Biggest Loser competition. I was so excited because I knew I’d done so well this week, worked hard, been conscious about my decisions and I knew it would pay off. I also know from experience that the weight falls off me right away because I’m so overweight and I knew it would be a good week, as long as I stayed on track, and I did.

So, the results from the weigh-in…

I went from 347.0 lbs last Wednesday, Jan. 4th, to 337.8 lbs on Jan. 11th! I lost 9.2 lbs in one week. I’m so ecstatic! I don’t anticipate next week being as big of a loss, but if I can continue to work hard, I’m hoping to be above 5 lbs for the next week.

What did I do to lose nearly 10 lbs in one week? This week, I ate healthy food including a couple Smart Ones frozen meals (when I was too busy to cook), lots of fresh healthy vegetables. When I was hungry, I snacked. I snacked on some chips and salsa, but I tried not to eat too many chips. I drank so much water. So. Much. Water. I noticed that after I did a little work out, and drank plenty of water, I wasn’t even hungry. I am typically “bored hungry” all day long, and when I was active and drinking lots of water, I wasn’t even craving food. I just felt comfortable and full. I was almost shocked, honestly.

I was active more, but not killing myself. I know from my previous experiences that I don’t want to over-do myself too soon, or I’ll quit and never stay on this path. So, I’ve been working out about every other day. I don’t really want to buy a gym membership at the moment, and I have access to a million work out routines and ideas through the wonderful world of So, I’ve been using this workout this last week: FIT | Plus Size/Beginner Workout – Follow Along

The workout I’ve been focusing on includes planking for 30 seconds, inclined push-ups, and step-ups. The workout is very simple, but oh-so effective. I’m honestly not able to plan for the whole 30 seconds, but with a brief couple second break in the middle, I’m kind of doing it. I noticed after doing it for the 3rd time, I did get better! The youtuber, Sarah Fit, who created the video made it just for beginners or overweight people getting into working out. She’s kind, encouraging, and does the workout with you in real-time, which I appreciate. I’d recommend you give the video a try if you’re looking for a beginning workout that is quick and simple, but effective!

After my first week, I’m already feeling better about myself emotionally and physically. My clothes fit a little more comfortably and seem to look a little better. I have SUCH long ways to go, but I’m enjoying this ride rather than making it unbearable. I’m feeling so refreshed, inspired, and loving myself. I’m also a part of a support group on facebook, which I mentioned in my last weight loss journey post, and they’ve been such a big part of how I’m mentally processing this journey.

My first goal for weight loss is to get out of the 300’s. I honestly can’t believe I even got to this point, but all I can do is change it. Once I get below 300, I’ll have lost 13% of my body weight. What a happy day that will be! But mostly, it will be motivation to continue working hard to get to the below 200 number. But, before I overwhelm myself, I’ll focus on my next goal in mind.

My mom has said in times when the task just seems too overwhelming, “how do you eat an elephant?” – the answer – “one bite at a time.”
