Ingredients

  • 1 pkg. frozen Hash Browns
  • 1 package Sour cream
  • 1 can cream of chicken soup
  • 1 stick butter
  • 1/2 Chopped onion
  • 2 grated Cheddar Cheese

Directions

Place potatoes in a greased 9×13 inch pan. Season with salt and pepper. Melt butter in the microwave. In a bowl add minced onions, sour cream, and cream of chicken soup, and melted butter. Mix these items together.

Pour soup mixture over potatoes; sprinkle with Cheddar Cheese. Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.

Cracker Barrel Hashbrown Casserole

This is the best Cracker Barrel Hashbrown Casserole copycat recipe ever! Just 8 ingredients to creamy, cheesy bliss.

Ingredients

  • 1 pound Frozen Hashbrowns (thawed Or Not, Doesn't Matter)
  • 1 can (10 1/2 Oz. Size) Cream Of Chicken Soup (or Cream Of Mushroom Or Celery For Vegetarian)
  • ½ sticks Butter, Melted
  • ¼ ounces, fluid Finely Chopped
  • ½ teaspoons Each, Salt And Pepper
  • 4 ounces, weight Sharp Cheddar Cheese, Grated
  • ⅔ cups Sour Cream

Preparation

Combine all ingredients except for a bit of the cheese in a large bowl.

Spray a medium baking dish with cooking spray and spread the mixture into the dish. Top with any remaining cheese.

Bake the casserole uncovered for 45–60 minutes until bubbly and lightly browned on top. Let rest for 10 minutes before serving if you can stand it.

Notes:
• This can be made in advance and kept in the fridge for a few days, then just bake and let rest right before you’d like to eat. Also delicious reheated as leftovers!
• Don’t stress about the baking dish size. This can be in a 9×13 in a thin layer, in a large loaf pan, or anything in between that fits all of the hashbrown casserole. Just be sure it’s hot and bubbly all the way through before you take it out of the oven!


Cracker Barrel Hash Brown Casserole Made Skinny (Copy-Cat)


This skinny remake is so cheesy, rich tasting and darn right delicious! Makes a wonderful side dish for eggs or a yummy side dish for dinner. Add diced chicken to create a fabulous main course meal. Each side serving has 100 calories, 4 grams of fat and 3 Blue WW Freestyle SmartPoints.

5 cups frozen hash browns, not thawed

1 cup onions, finely chopped

¼ cup light butter or Smart Balance Light, melted

½ of a 10.5 oz can Campbell’s Healthy Choice cream of chicken soup

Lawry’s seasoning salt and black pepper, to taste

1 cup light cheddar cheese, shredded

2 tablespoons green onions, sliced (green parts only), optional topping

1. Preheat oven to 350 degrees. Coat a 9 x 9 inch casserole dish with cooking spray.

2. In a large bowl, mix all ingredients together except cheese and green onions. Spread out in casserole dish. Sprinkle cheese evenly over top. Cover with foil and bake for 30 minutes. Remove foil and continue to bake for 30 minutes until golden brown.

3. Garnish with green onions, if desired.

Makes 12 side servings or 6 main course servings.

You can freeze the leftover casserole. Place the leftover Hashbrown bake in an airtight container and store the leftovers for 2-3 months.

I like to freeze in single-serve containers. Then when I want lunch or an easy side dish I head to the freezer.

Yes! This hash brown casserole freezes really nicely. If you freeze after you cook it, allow it to cool completely. Then put in an airtight container or wrap in aluminum foil and freeze. Then just toss in the oven to reheat when you are ready to eat the rest of it.

You can even freeze this casserole before you bake it. Now, if you plan to use your Ninja Foodi, what I recommend is placing your casserole ingredients in say a freezer bag. Then place the bag in the pan for your Ninja Foodi. So it takes the shape of the pot and then toss in the freezer. That way when you go to heat it up you can use your Ninja Foodi easily. It will be the same size as the pan. Otherwise, if you don&rsquot you won&rsquot be able to heat it up in your Ninja if it won&rsquot fit in the pot.

It was BIG exciting news when Cracker Barrel opened in our sleepy little neck of the woods. We had very few restaurants up until that point and the only chains were fast food restaurants. I’ve always been a Hash Browns with cheese sort of gal, so the Cracker Barrel Hashbrown Casserole was right up my alley! No matter the time of day that I ate there, I always asked for the Hash Brown Casserole even though they only prepared it for breakfast. Sometimes I lucked out and was able to get it, other times I wasn’t so lucky. No matter the time of day I ordered it, I was often disappointed because it was always served to me at room temperature or colder.

Once I realized I had a cookbook with the Cracker Barrel Hash Brown Casserole recipe in it, I quit being disappointed because I quit ordering it at the restaurant. Now, I prepare my own casserole at home and get to enjoy it while it’s fresh and hot. Since there are just two of us at my house, I usually make this and bake 1/2 of the batch and freeze the other half. When I need a larger batch, I double the batch. I freeze before baking in the small Pyrex casserole dish that I’ll later cook it in. I’m sure that this would also freeze well in a heavy duty freezer bag.

There’s another reason that this recipe is better than many other Hash Brown casserole recipes. This one doesn’t call for the use of any mayo, sandwich spread, or whatever you wish to call it. The need for those products kept me from cooking many of the other recipes that I found over the years. I’m so particular about that white stuff that I even know what the casserole looks like when it’s been cooked with that stuff!


How To Make Cracker Barrel’s Secret Hashbrown Casserole Recipe

There are certain foods that are impossible to replicate: McDonald’s french fries, Red Lobster biscuits, and Cracker Barrel’s hashbrown casserole. Impossible until now, that is — at least in regards to the last of those three things! This recipe for copycat Cracker Barrel hashbrown casserole from Cake’s Cottage is so good, you’ll feel like you’re sitting in the restaurant and not in your own home.

To make a homemade Cracker Barrel hashbrown casserole, you will need:

1 container of sour cream (16 ounces)

1/2 cup of onion, peeled and chopped

2 cups of cheddar cheese (grated), plus more for sprinkling on top

1 package (2 pounds) of frozen hashbrown potatoes, thawed

1 (10 1/4 ounce) can of cream of chicken soup

Green onion, sliced (optional, green parts only)
