Leek with olives

Clean, wash and cut the leeks.

Fry the onion and leek in 4-5 tablespoons of oil, over low heat, until soft, in a heat-resistant oven dish. Pour the tomato sauce and, eventually, add a little more water to make the food more juicy. Add the olives, cover the pot with a lid and cook for another 10 minutes. Add salt, pepper, bay leaf, sugar to taste and cook for another 5 minutes.

Remove the pan from the heat and place in the hot oven for 10 minutes.


Remove the bay leaves, sprinkle with parsley and serve hot leek food with peasant bread.
